Jen’s Famous Pecan Bars

A family recipe:

When I was a little girl, my family and I made this recipe every holiday season. This year I am sharing it with you!

Ingredients

1 c melted butter
1/2 c powdered sugar
1/2 c cornstarch
2 c flour
4 eggs
2 c packed brown sugar
4 tbs flour
1/2 tsp baking powder
2 tsp vanilla extract
1 c shredded coconut
2 c chopped pecans
1/2 c softened butter
8 oz softened cream cheese
4 c sifted powdered sugar
1 tsp vanilla extract
1/2 tsp salt

Directions

Step 1: Create crust with first four ingredients: butter, powdered sugar, cornstarch, and flour. Press into 9x13 pan bake at 300 for 15 minutes. Remove from oven.

Step 2: in a bowl, combine 4 eggs, brown sugar, 4T flour, baking powder, vanilla, and coconut and pecans. Add mixture on top of crust, spread over first layer with offset spatula. Bake at 350 for 5 minutes. Remove from oven and cool to room temperature.

Step 3: make frosting. In mixing bowl cream softened butter and softened cream cheese, whip to combine, add vanilla and salt, mix to combine. Add powdered sugar one cup at a time and mix thoroughly to combine. If necessary add small amounts (1T at a time) of warm water until desired consistency Frost. Cut into squares and enjoy!
